Creamy zucchini soup

An extremely quick soup that won't fill you up very much, but will warm you up nicely. I used to add chili to this soup, but today I realized that I ran out of it. I didn't even have a pinch, so I didn't add it there. It warmed me up only for a moment thanks to its temperature :) But I have to say that I make this soup quite often, especially when I have little time and I'm in a hurry to go somewhere.

Ingredients
17.5 oz
yellow or green zucchini
2 pcs
carrot
1 pc
onion
1 tbsp
olive oil
2 tbsp
spelt flour
2 ¾ cups
vegetable broth
4 tbsp
pecorino cheese
salt
ground white pepper
Preparation steps
Print
  1. Saute diced onion in oil, add grated carrot and zucchini (do not peel young ones).
  2. Saute for a while, sprinkle with flour, mix, and cover with broth. Salt, pepper and cook until soft.
  3. Blend the soup with a hand blender into a smooth cream and add salt to taste.
  4. Sprinkle the hot soup generously with cheese on the plate. If you want, you can add garlic croutons.
